Blue Cheese Dip.

Bottled blue cheese dressing is a fine salad product and a bad wing partner. The real thing is chunky, tangy and cold — a full-contrast rest stop between bites of hot sauce.

Ingredients

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 100 g blue cheese, crumbled — keep the crumbles big
  • 1 tbsp lemon juice
  • 1 tsp white vinegar
  • Black pepper
  • 1 tbsp chopped chives (optional)

Better after an hour in the fridge, best the next day. Wings rarely leave it that long.

Mix the base

Sour cream, mayo, lemon juice and vinegar in a bowl. Whisk smooth.

Fold in the cheese

Add the blue cheese and fold — don't whisk. You want boulders, not paste. Season with pepper; the cheese usually brings enough salt.

Chill

Cover and refrigerate at least 30 minutes if you can wait. Scatter chives on top. Park it next to something covered in buffalo sauce and celery, and let nature take its course.
