Proper Pub Nachos.
The difference between good nachos and a basket of regret is architecture. One layer of chips, cheese, toppings. Then another. The bottom chip deserves the same life as the top chip.

The build
- 1 big bag sturdy corn tortilla chips
- 3 cups shredded cheese — half mozzarella, half old cheddar
- 1 can black beans, rinsed
- ½ red onion, diced
- 2 jalapeños, sliced
- 1 red pepper, diced
After the oven
- Salsa, sour cream and guacamole, in bowls
- 2 green onions, sliced
- Handful of chopped cilantro (optional, per your household's politics)
Cold toppings go on after the oven — always. Hot tray, cold salsa, loud table.
Layer one
Half the chips on a parchment-lined sheet pan in a single generous layer. Half the cheese, half the beans, half the onion, jalapeño and pepper. Edge to edge — the perimeter chips are people too.
Layer two
Repeat. Chips, cheese, everything else. The second layer is why pub nachos taste better than home nachos. Most homes only build one.
Bake
400°F (200°C) for 10–12 minutes, until the cheese is fully melted and bubbling at the edges. Broil the last 60 seconds if you like browned spots (you like browned spots).
Dress and serve
Green onion and cilantro over the top. Salsa, sour cream and guac in bowls on the side — dolloping them on the tray steams the chips and ends friendships. Serve on the pan.
