The wings
- 1 kg chicken wings, split
- 1 tbsp baking powder (aluminum-free)
- 1 tsp salt
Honey garlic sauce
- ⅓ cup honey
- 3 tbsp soy sauce
- 4 cloves garlic, minced
- 1 tbsp butter
- 1 tsp white vinegar

Bake the wings crispy
Same church as buffalo: pat dry, toss with baking powder and salt, bake on a rack at 425°F (220°C) for 45–50 minutes, flipping once, until golden and crisp.

Build the sauce
In a small pot over medium-low: butter, then garlic for 30 seconds — fragrant, not brown — then honey, soy and vinegar. Simmer 3–4 minutes until it coats a spoon.

Glaze
Toss the hot wings in the sauce, then back on the rack for 5 more minutes in the oven. This second bake turns the coating from wet to lacquered.

Serve
Pile them up, pour any leftover sauce into a dish for dipping, and put out more napkins than feels reasonable.
